Alexandra Village Food Centre occupies a corner of Bukit Merah that has always resisted the homogenising forces of Singapore's development. The village it sits in — a cluster of low-rise light-industrial and residential blocks — has a texture that most of Singapore has lost. The food centre reflects that. The beef noodles here have been made from the same recipe for decades. The BBQ chicken wings draw queues that stretch past the entrance on weekend evenings. The char kway teow uncle finishes each portion with a finality that suggests he has somewhere else to be, even though he has been standing at the same wok for twenty years.
