Story

Fish head curry is Singapore's most theatrical dish: the head of a red snapper or grouper, halved and submerged in a rich, tangy curry of tamarind, coconut milk, and ground spices, served on a banana leaf with rice. The dish is entirely Singaporean โ€” created in the 1950s by S. M.
